All the drama of a trompo, none of the meat. Mushrooms spiced and stacked the same way, carved hot and served fast. It hits the same notes. You just didn't see it coming.

Thick, hand-pressed masa with pinched edges, topped simply and eaten standing up. One of those things that doesn't look like much until you take a bite and realize it's been here forever for a reason.
La Tortillería
A stop at a working tortillería. Fresh masa, hot off the comal, eaten right there. No toppings needed. This is what everything else is built on.
Tacos de Canasta
Steamed in a basket since early morning, these are soft, simple, and deeply savory. Bean or potato, loaded with salsa. The vegetarian versions are the originals. Pure CDMX comfort food.
Quesadilla de Huitlacoche
Mexican corn truffle on a hand-pressed blue corn tortilla. Earthy, smoky, and one of the most underrated ingredients in Mexican cooking.
